Well today has been pretty full on between catching up for coffee and Cake with Jan from Little Red Hen and attending some doctors appointments, but I still managed to give the Lemon Refrigerator Pie recipe I saw on Less Cake {More Frosting} a whirl:
In real life the pie is slightly more yellow than it looks in the photo (damn you winter lighting!), and it tastes absolutely delicious!
When I read Lara's post and she said that she waits until summer to make this pie, I thought "Is this woman nuts?!? Pie is suitable ALL year round, regardless of the season". I do have to admit though, that now I have tasted it I definitely think it is more of a 'summer' pie.
You see, it isn't as heavy as your normal lemon type pie. Kind of more of a moussey (is that even a word!) texture - light and fluffy.
