We had an abundance of apples in our cupboard, so I decided to make apple crumble this morning:
Ingredients:
For the stewed apples:
10 apples
2 tbspns cinnamon sugar
1 tbspn sugar
For the crumble:
1 cup of plain flour
3/4 cup of brown sugar
3/4 cup of rolled oats
3/4 cup of coconut
2 tbspns mixed spice
2/3 cup of butter
A dash of vanilla essence
Method:
For the stewed apples:
- Peel and core the apples and place in a saucepan. I use an apple slinky for this as it makes the whole task a LOT quicker! Cover the apples with water and simmer with a lid on until they are tender. Drain apples and place in a bowl.
- Toss cinnamon sugar and additional tablespoon of sugar through the apple mix.
- Place apple mixture in the bottom of a casserole dish and spread out evenly over the base.
For the crumble:
- Combine flour, brown sugar, oats, coconut and mixed spice in a bowl.
- Melt butter and add to mixture. Add the vanilla essence.
- Mix well, ensuring that the texture of the mixture is crumbly. If not, add more oats and/or flour until it is crumbly.
- Spread crumble mixture over the top of the apple in the casserole dish.
- Bake at 180 degrees celsius for 40 minutes or until the crumble has browned.
You could serve this with ice cream or cream. I serve mine with custard:
Blast you! I was gonna do my apple cake recipe, I used the apple slinky for that too! Now I won't seem so original! Should have done it yesterday!
